With Chef Dewa
Fascinated by the flavours of East Bali?
You’re invited to spend two and half hours ‘hands-on’ with 5-star hotel chef Dewa to create your own ‘Megibung’ feast and then enjoy the meal you have learnt to prepare yourself. (Megibung is the Balinese word for ‘Rijstaffel’ or rice table – a selection of zesty dishes piled high on bamboo platters.) You will learn to use traditional kitchen utensils, including a stone ‘ulukan’(mortar and pestle), and your meal will be served on traditional platters of bamboo and banana leaves.
Your lesson will start with a special Balinese health drink (‘loloh’), and you will receive recipes which you’ll be able to prepare at home.
You can choose to have your class at Villa Nilaya or ‘al fesco’ in the beautiful rice fields of East Bali – just ask us!
And you can choose to prepare lunch or dinner. Each lesson will include information about the ingredients, particularly pointing out the difference between local ingredients and those you are likely to find at home, so that you will be able to recreate these distinctive flavours in your own kitchen. It is a three course meal with 8 different recipes.
If you are vegetarian, or require halal meat, please advise us and we can certainly alter the menu to your taste and preferences.
ABOUT CHEF DEWA was born at Amlapura ,the regency capital of the East Bali province of Karangasem. He worked as a cook until 1997, an then graduated to chef at the Mimpi Hotel in Tulamben, followed by 4 years working as a chef on the celebrity cruise line. For two years Dewa worked with Australian company Gloria Jeans Coffee before moving to the 5-star resort Alila Mangiss hotel as Executive Sous Chef. He is currently Executive Chef with the Royal Karma group.
